Gyuto 225mm English OakThis Tetsu Gyuto feature a long blade, good distal taper, and thin tip. Flat profile with a slight curve toward the tip. The san mai is fire welded from 1. 2442 core steel with historic wrought iron cladding. Forged to shape and to geometry the bevels are ground on water cooled grinding stone with a satin finish. The 1. 2442, is a wear resistant tungsten steel very similar to the Japanese Blue 1 (Aogami 1). It's made in Germany by Achim Wirtz. Specs :
