The palate of dark berry fruits, herbs and cedary oak is tightly structured by the fine grained tannins and acidity. While 'Gallagher's Choice' will drink well at release, patience will be rewarded as the wine develops and evolves
The Cabernets were co-fermented with CSM yeast for twelve days with twice daily pump overs
